Smashed Potatoes

1 lb baby potatoes
Salt to taste
1/2 c oil
1 tbsp curry powder
2 tsp salt
3 cloves garlic, grated
@grandandessex Caramelized onions and pesto to top
Pine nuts .
Boil the potatoes in salted water for 20 to 25 minutes or until fork tender.
Place over a sheet pan lined with parchment paper. Press each potato with a spoon until it’s smashed.
Mix the oil salt curry and garlic together and pour over the potatoes. Spread over with your fingers so it’s coated evenly.
Bake at 425 F for 20-25 minutes or until crispy.
Top with pesto, Caramelized onions and pine nuts.
