Broccoli Quiche
Recipe:
1 onion diced
2-3 cloves garlic, minced
1 bag frozen broccoli
1/2 c Plain Greek yogurt
4 eggs
2 cups shredded cheese
1/2 Parmesan cheese
1/2 tsp salt
Black pepper to taste
2 9 inch pie shells (not deep dish)
Sauté the onion and garlic until translucent for 5-8 minutes over medium heat. Add frozen broccoli to the pan. Sauté until lightly browned about 5-8 minutes more. Set aside.
In a bowl mix the remaining ingredients besides the pie crust.
Fold in the vegetables and transfer into the pie shells.
Bake at 350F for 45-50 minutes or until golden brown and firm.
