Meat Loaf

1/2 c Panko breadcrumbs
1/2 cup almond milk
1 tablespoon olive oil
1 onion, finely chopped
4 cloves garlic, minced
2 pounds ground beef
1 tbsp white miso
2 large eggs
¼ cup parsley, chopped
3 level tablespoons tomato paste
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 teaspoon salt
1/2 teaspoon pepper
Preheat oven to 400 F.
Allow the almond milk to soak the breadcrumbs for 5-10 minutes and then mix all the ingredients together. Place into a loaf pan and turn over onto a cookie sheet covered in parchment paper. Make the sauce.
3/4 cup ketchup
2 tablespoons tomato paste
2 tablespoons light brown sugar, packed
4 tablespoons cider vinegar or white vinegar
1 teaspoon Worcestershire sauce
1 teaspoon each garlic powder and onion powder
1/2 teaspoon cracked black pepper
Mix all ingredients and brush over the top of the meatloaf. Bake at 400F for 50 minutes. Remove from oven and brush with remaining sauce. Return to the oven for 20 more minutes. Allow to sit for 10-15 minutes before slicing and serving.
