Healthy Snickers

Healthy Snickers 

  • 1 package dates (approx 15-20) 

  • 1 cup peanut butter 

  • Roasted and salted Peanuts 

  • 2 tsp vanilla 

  • Pinch of salt 

  • 2 packages chocolate chips 

  • 2 tbsp coconut oil 

  • Flaked sea salt 

  1. Soak your dates in hot water for 10 minutes to soften.

  2. Remove the pit from each date by pulling apart the fruit halfway. Set aside.

  3. Mix peanut butter with salt and vanilla. Set aside. 

  4. Melt your chocolate chips in 30 second increments in the microwave, stirring in between. until mostly melted. Then add your coconut oil and melt for an additional 30 seconds. Mix to integrate. 

  5. Fill the open section of your date with the peanut butter mixture, top with 1-2 peanuts. 

  6. Dip in chocolate and allow to set on a sheet pan. Top with flaked sea salt and peanuts. 

  7. Store in the fridge until ready to eat. 

Yield ~20 snickers
