Recipe:

1 pack pita sliced in half
1 lb ground beef
1 medium onion
1/2 cup parsley
Juice of 1 lemon
1 tbsp tomato paste
1/2 tsp cinnamon
1/2 tsp all spice
1/2 tsp paprika
1 tsp salt
1 cup tamarind paste
1 Tbsp honey (optional)
2 tbsp oil plus more for brushing
Tahini for serving

In a food processor blend the onion and parsley until finely chopped.
Add to a bowl with the remaining ingredients (except the pita) and mix
Open the pitas carefully. Stuff with the meat mixture- about 1/4 cup should do it. Don’t overstuff.
Spread the mixture out so it’s relatively even.
Carefully slice the pitas in half.
Brush both sides with oil.
If grilling: on medium-high heat grill all sides for 2-3 minutes starting with the open sides first and then moving on to the flat sides.
Char marks should form.
Remove from heat and enjoy
If baking: lay on a sheet pan in a single layer and bake at 400 F for 25-30 minutes or until golden and crispy.
Serve with tahini sauce!
