Grilled Peaches with Cardamom Whipped Cream

This recipe is not a new concept in anyway. I wish I could credit the first person who thought it would be a good idea to stick peaches on the grill and cover them with a sweet spiced whipped or iced cream but truth is it's so iconically a summer recipe, I have a feeling we would be throwing it back to the original fourth of July BBQ just for #creds. 

Peaches are a late summer fruit making it widely available as people are throwing down their burgers on hot summer days with family and friends. When you are grilling an entire BBQ, why shouldn't your dessert be grilled as well? 

Here's why this is so great, Grilling peaches brings out the sugars (mallard reaction) to make the juiciest ripest peaches of summer even better and sweeter! The smoky flavor is the perfect compliment to the bright summer taste and the light and fluffy whipped cream makes for a perfect textural foil to the soft almost custard-like peach and the deep smoky flavor. Adding cardamom in here is the perfect way to add a little spice without becoming overwhelming. Those of you who know me, know that I love cardamom in almost every dish I make. I find it to be a more mellow taste than cinnamon with all the benefits of warm and comforting flavor. its the kind of taste that brings you home. 

The combo of the smoke, sweet, a little tart along with the fluffy spiced cream makes for a dish that is satisfying not to mention beautiful and super super easy! 

You are not trying to melt the peaches into oblivion here, you want to just get that softness going and excellent grill marks for aesthetics so don’t keep them on any longer than 10 minutes total. You can serve this as a single dish for each person or as a stunning dessert platter. Either way, the overall look is incredibly impressive with very minimal effort. don’t overthink it, doing this quick, easy and effortlessly is the entire point of this dish! 

Try and aim to get pretty ripe apaches here, not the ones that are breaking down into brown mush already but those that are somewhat soft but still have a little bounce when pressed. These peaches will be easier to remove the pits from and also yield the best flavor and texture after grilling. 

Don’t forget to use the olive oil here! The sugars will caramelize on the grill and cause the peaches to stick otherwise which will cause a giant mess instead of a stunning dessert.

Grilled Peaches with Cardamom Whipped Cream 

  1. Spray the grates with olive oil spray 
  2. Place the peaches, skin side up on the gates over direct heat and cook for about 5-8 minutes or until great grill marks form and the peaches begin to break down. remove the peaches from the grill and set aside. 
  3. In a large bowl, gently fold together the whipped cream, sugar, vanilla and cardamom until integrated. 
  4. Plate the peaches and spoon the whipped cream over the peaches, sprinkle with vanilla sugar if desired. 
  5. If you can’t find the Coconut whip, place a can of full fat coconut milk into the freezer for at least 15 minutes, then open and whip until stiff peaks form- about 10 minutes. use as directed above.
  6. No grill? No problem, just stick the peaches under the broiler skin side down for about 3-5 minutes or until the skin starts to blacken.
