Mamoul Hamantaschen 

Dough

  • 1 cup flour 

  • 1.5 cup semolina flour 

  • ¾ teaspoon baking powder 

  • ½ teaspoon salt 

  • ½ cup confectioners sugar, plus more for dusting 

  • 1 stick vegan butter or butter, room temperature

  • 1 egg

  • 2 tablespoons orange blossom or rosewater 

  • 2 tablespoons milk or nut milk 

Filling 

  • 1 cup date paste 

  • 2 tablespoons orange blossom water or rosewater 

  • ¼ cup chopped pistachios 

  1. In a large bowl mix together the flour, semolina, salt, and sugar. Add the butter, egg, orange blossom or rosewater and milk. 

  2. Mix to integrate until a dough forms. 

  3. Allow to sit for 15 minutes for the dough to hydrate before shaping. 

  4. In the meantime mix all the filling ingredients together. 

  5. Roll the dough on parchment paper to about ½-¼  inch thick. Cut with a circular glass or cutter to get as many circles as possible. Add scant 1 teaspoon of filling to the center of each circle. 

  6. Bring the top sides of the circle and pinch together to form a corner. Bring up the bottom half and pinch both sides to form two corners. You should have a triangle now. Press closely toward the center so that the dough does not open. 

  7. Bake ion a single layer on a sheet pan at 350°F for 18-20 minutes or until golden brown. 

  8. Dust with confectioners sugar and enjoy!
