Banana Bread

Recipe:
1/2 c butter or vegan butter softened
3/4 c sugar
1/4 c brown sugar
2 eggs
4 bananas, mashed, super ripe is best
1.5 cups flour
1 tsp baking soda
1/2 tsp cinnamon (optional)
1/2 tsp salt
1 tsp vanilla
1 cup chocolate chunks (optional)
Preheat oven to 350F and spray a loaf pan- set aside.
In a large bowl, mix the butter and sugars. Add the eggs one at a time and mix along with the vanilla. Add the smashed banana and mix.
Mix the flour baking soda cinnamon (if using) and salt in a bowl and pour it into the bowl with the batter.
Mix until just integrated. Fold in the chocolate if using.
Transfer to prepared loaf pan.
Bake 350F for 50 minutes or until a toothpick inserted comes out clean.
